Pomegranate Aloe cheesecake

Raw Vegan Recipe – 8 servings
2 cups raw nuts (sunflower seeds and cashews)
1 cup dates
dash of sea salt
3 cups soaked cashews
3/4 cup Pomegranate Aloe Vera juice
1/3 cup maple syrup
1/2 cup coconut cream
1/4 cup lemon juice
dash of salt
2 cups organic blueberries, 1/2 fresh pomegranate
1/2 cup Pomegranate Aloe Vera juice
How it’s made
For the base: pulse the nuts and dates in a processor until it makes a paste. Press into a coconut oil greased muffin tray.
For the cheesecake: blend all ingredients in a processor or blender until smooth.
For the topping: blend the blueberries and the aloe vera juice. Drizzle over the cheesecake with pomegranate seeds. Place in the freezer for a few hours, take out to chill for 10 minutes before enjoying!
